I finally perfected this simple, delicious, and most of all, healthy recipe for veggie wraps. It's a great quick dinner or lunch, can be made in about 10 minutes, and the ingredients are easy to keep on hand.
For this recipe, you will need:
bag of frozen veggies (I like the Asian mix with mushrooms, red peppers, broccoli, and water chesnuts)
feta cheese
Italian dressing
Tomato basil tortillas
Heat up a frying pan and dump about a tablespoon of Italian dressing, then add about 1.5 cups of vegetables. You can add more to adjust for more wraps. Toss well, then heat up another pan (I like to use cast iron) to toast the wrap. Cook the veggies for about 8 minutes, stirring occasionally, until tender, keeping an eye on the toasting wrap.
Add a bit of the cheese to the veggies, to taste, let it get a little melty, then scoop the mixture onto the wrap. Wrap up and enjoy!
